This was the fourth recipe that I have made from Gino d’Acampo’s ‘La Dolce Diet’ cookbook.
3 ripe avocados
4 teaspoons freshly squeezed lime juice
4 x 2cm thick slices of rustic bread, halved and toasted
1 teaspoon smoked paprika
1. Half the avocados, discard the stone and scoop the flesh into a medium bowl. Pour over the lime juice and mash roughly using a fork. Add salt.
2. Spread the avocado onto the toasted bread and sprinkle with paprika.
d’Acampo serves his bruschette with fresh tomatoes. Given that it is winter here in England at the moment, I chose to accompany this meal with tomato soup instead.
